In 1921, the Swiss engineer Jean Déglon founded a cutlery workshop in Thiers, the French capital of knives. Déglon initially specialized in knives and cutlery for catering customers and quickly gained a worldwide reputation thanks to the excellent product quality. Since then, constant innovation has been the hallmark of the successful family business, which is managed by the third generation.
DÉGLON HIGH WOODS
Two fine woods combined in one knife handle
There are many knives with wooden handles. But the High Woods from Déglon combine two attractive woods in one handle:
Light white oak is used on the top of the handle, which contrasts attractively with the dark walnut wood on the underside, separated by a fine bar made of 430 stainless steel.
The blades made of martensitic stainless steel 5CrMov15 have a high hardness, edge retention and good resharpenability.

The Oryx knives have a modern, puristic look. The razor-sharp, forged blade consists of a high-quality molybdenum-vanadium alloy and offers maximum protection against rust.

The Sabatier, a classic of fine cuisine
The Auvergne cutlery town of Thiers, where Déglon is also based, was once home to two extended families called the Sabatier. One of the two, one can no longer say which one, began with the manufacture of forged knives with a rounded bolster. The "Sabatier knife" quickly became the favorite knife of many chefs due to its ease of use and thus gained worldwide fame.
