The frying surface of the premium cookware from Carl Schmidt Sohn has a special high-low structure: the uncoated stainless steel parts are raised like a net, while the non-stick coated stainless steel surfaces are lower. A metal spatula or whisk, for example, simply slides over the uncoated stainless steel bars without even touching the non-stick coating underneath.
The complex construction made of multi-layer material also ensures good heat distribution throughout the cookware up to the edge.
